Ingredients
  

  • 1 cup whole white wheat flour or whole wheat flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon table salt
  • 1/3 cup canola oil or melted coconut oil or butter
  • 1/3 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 cup mashed banana (about 3-4 ripe bananas)

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. Grease your loaf pan lightly with oil or line it with parchment paper.
  3. In a mixing bowl, mash the ripe bananas with a fork until smooth.
  4. Add the canola oil, honey (or maple syrup), vanilla extract, and the egg to the mashed bananas. Whisk everything together until well combined and smooth.
  5. In another bowl, whisk together the whole wheat flour, baking powder, baking soda, and salt.
  6. Gradually add the dry ingredients to the wet mixture, using a rubber spatula to fold gently until just combined.
  7. Pour the batter into the prepared loaf pan, smoothing the top with the spatula.
  8. Place the loaf pan in the preheated oven and bake for about 50-60 minutes, or until a toothpick inserted comes out clean.
  9. Once baked, let it cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.

Notes

  • Use very ripe bananas for the best flavor and sweetness.
  • Store overripe bananas in the freezer until ready to bake.
