  • 1 pound refrigerated pizza crust dough Trader Joe's garlic & herb dough is a great choice, but feel free to use your favorite.
  • 24 cloves garlic (about 2 heads, separated, peel left on)
  • 2 tablespoons olive oil (plus more for working the crust, if desired)
  • 1 cup part-skim ricotta cheese (whole milk ricotta works too)
  • 2 tablespoons chopped fresh basil
  • 1 teaspoon honey
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon kosher salt (more for sprinkling the garlic)
  • 1/4 teaspoon freshly ground black pepper
  • 10 ounces frozen chopped spinach (thawed and squeezed to remove any excess moisture)
  • 2 cups shredded mozzarella cheese (divided)

Instructions
  1. Step 1: Roast the Garlic - Preheat your oven to 400°F (200°C). Drizzle the heads of garlic with olive oil, wrap in aluminum foil, and roast for 30-35 minutes until soft and caramelized.
  2. Step 2: Prepare the Dough - Allow refrigerated dough to sit at room temperature for 15-20 minutes before rolling it out on a floured surface.
  3. Step 3: Create the Ricotta Mixture - In a mixing bowl, combine ricotta cheese, basil, honey, oregano, salt, and pepper until creamy.
  4. Step 4: Prepare the Spinach - Ensure the thawed spinach is squeezed of excess moisture to avoid sogginess.
  5. Step 5: Assemble the Pizza - Spread the ricotta mixture over the rolled-out dough, top with half the mozzarella, spinach, roasted garlic, and remaining mozzarella.
  6. Step 6: Bake the Pizza - Bake for 15-20 minutes until the crust is golden brown and the cheese is bubbly.
  7. Step 7: Serve and Enjoy - Let cool slightly, slice, and enjoy with a sprinkle of fresh basil if desired.
