Ingredients
  

For the Chow Mein:
  • 8 oz fresh egg noodles (or steamed chow mein/chow mein)
  • 3 tablespoons oil
  • 3-4 cloves garlic (finely minced)
  • 6 fresh shiitake mushrooms (cut into small pieces)
  • 2 oz cabbage (finely sliced)
  • 1/2 small carrot (peeled and cut into thin strips)
  • 2 tablespoons soy sauce
  • 1/4 teaspoon dark soy sauce (for coloring purpose, optional)
  • 1 tablespoon sugar
  • 1/2 teaspoon sesame oil
  • 3 tablespoons water
  • 3 dashes white pepper powder
  • Salt (to taste)
  • 4 oz bean sprouts (rinsed and drained)
  • 2 stalks scallion (cut into 2-inch lengths)
  • 1 tablespoon garlic chili sauce

Method
 

Instructions:
  1. Step 1: Prepare the Noodles
    Begin by cooking the fresh egg noodles according to the package instructions. Drain and set aside. If using steamed chow mein, make sure to have it ready for cooking.
  2. Step 2: Heat the Oil
    In a wok or large skillet, heat the oil over medium-high heat. Once hot, add the minced garlic and sauté until fragrant, about 30 seconds.
  3. Step 3: Add the Vegetables
    Toss in the shiitake mushrooms, cabbage, and carrot. Stir-fry for 2-3 minutes until the vegetables are slightly tender yet still vibrant.
  4. Step 4: Incorporate the Noodles
    Add the cooked noodles to the pan, along with the soy sauce, dark soy sauce (if using), sugar, sesame oil, water, and white pepper. Stir well to combine all the ingredients.
  5. Step 5: Add Bean Sprouts and Scallions
    Fold in the bean sprouts and scallions, cooking for an additional 2 minutes. This ensures everything is heated through and flavors meld beautifully.
  6. Step 6: Final Touches
    Adjust the seasoning with salt to taste, and drizzle in the garlic chili sauce for an extra kick. Mix well and serve hot.
