  • 3 cups Graham cracker crumbs
  • 1 cup Sugar
  • 16 tablespoons Melted butter (or 1 cup)
For the Filling:
  • 2 packages Cream cheese (16 ounces total)
  • 1 cup Sour cream
  • 2 beans Vanilla beans (seeds only)
  • 3 large Eggs
  • 1 teaspoon Vanilla extract

Method
 

Preparation Steps:
  1. Step 1: Preheat your oven to 325°F (163°C).
  2. Step 2: Line your 9x13 inch baking pan with parchment paper.
  3. Step 3: In a mixing bowl, combine the graham cracker crumbs, sugar, and melted butter. Press into the bottom of the prepared pan.
  4. Step 4: Bake the crust for 10 minutes. Let it cool slightly.
  5. Step 5: In another bowl, beat the cream cheese until smooth. Gradually add the sugar, then the sour cream, vanilla bean seeds, and vanilla extract.
  6. Step 6: Beat in the eggs one at a time on low speed.
  7. Step 7: Pour the filling over the baked crust.
  8. Step 8: Bake for 30-35 minutes until set around the edges.
  9. Step 9: Cool in the oven for an hour, then refrigerate for at least 4 hours.
  10. Step 10: Lift the bars out using the parchment paper, slice, and serve.

  • Store bars in an airtight container in the refrigerator for up to 5 days.
  • Freeze individual bars wrapped in plastic wrap for up to 3 months.
