Ingredients
  

For the Crust:
  • 1 ½ cups graham cracker crumbs
  • 5 tablespoons butter melted
  • 5 tablespoons sugar
For the Cheesecake Filling:
  • 16 ounces cream cheese
  • 1 cup powdered sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
For Topping:
  • 1 cup caramel sauce
  • 1 cup chocolate chips

Method
 

Instructions:
  1. Step 1: Prepare the Oven and Pan - Preheat your oven to 325°F (160°C). Line a 9x9 inch baking pan with parchment paper, allowing some overhang for easy removal later.
  2. Step 2: Make the Crust - In a mixing bowl, combine the graham cracker crumbs, melted butter, and sugar. Stir until the mixture resembles wet sand. Press this mixture firmly into the bottom of the prepared baking pan to form an even layer.
  3. Step 3: Prepare the Cheesecake Filling - In another bowl, beat the cream cheese until smooth. Gradually add the powdered sugar, mixing until well combined. Add the eggs one at a time, mixing in between. Finally, stir in the vanilla extract until everything is well incorporated.
  4. Step 4: Bake the Cheesecake - Pour the cheesecake mixture over the crust in the baking pan. Bake in the preheated oven for about 30-35 minutes, or until the edges are set and the center has a slight jiggle. Remove from the oven and allow it to cool at room temperature for about 15 minutes before refrigerating for at least 4 hours, preferably overnight.
  5. Step 5: Add Caramel and Chocolate - Once the cheesecake is chilled, drizzle caramel sauce over the top. Melt the chocolate chips in a microwave-safe bowl in 30-second intervals, stirring in between until smooth. Pour the melted chocolate over the caramel layer, spreading it evenly.
  6. Step 6: Chill Again - Return the cheesecake bars to the refrigerator for an additional hour to set the chocolate layer. When ready, lift the bars out using the parchment overhang and cut into squares.

Notes

  • Ensure your cream cheese is at room temperature for a smooth filling.
  • Do not overbake the cheesecake; a slight jiggle in the center is what you want.
  • For a cleaner cut, dip your knife in hot water before slicing.
