Ingredients
  

For the Nuggets:
  • 2 pieces turkey breast tenderloins cut into 1" cubes
  • 2 to 3 inches vegetable oil for frying
  • 1 cup all-purpose flour
  • 3 large eggs beaten
  • 1 cup panko
  • ½ cup Old Bay seasoning
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 2 teaspoons garlic powder
  • 1 tablespoon baking powder

Method
 

Cooking Instructions:
  1. Start by cutting the turkey breast tenderloins into 1" cubes.
  2. Set up your breading station with three bowls: in the first, mix flour, salt, pepper, and garlic powder; in the second, beat the eggs; in the third, combine panko and Old Bay seasoning.
  3. In a large frying pan, heat vegetable oil over medium heat until it reaches 350°F (175°C).
  4. Dredge turkey pieces in the flour mixture, dip into the beaten eggs, and coat with the panko mixture.
  5. Fry the nuggets in hot oil, about 3-4 minutes on each side, until golden brown and cooked through (165°F or 74°C internal temperature).
  6. Remove cooked nuggets with a slotted spoon and drain on paper towels. Serve immediately.

Notes

  • Store leftovers in an airtight container in the fridge for up to 3 days.
  • Reheat in the oven at 375°F (190°C) for 10-15 minutes for best results.
  • Consider making a double batch for busy weeknights.
