Ingredients
  

  • 1/2 cup unsalted butter softened
  • 3/4 cup white sugar
  • 1/4 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chocolate chunks (or chocolate chips)
  • 1 cup mini marshmallows
  • 3 bars Hershey chocolate (1.55 ounces each)
  • 1/4 cup graham cracker crumbs (about 1 1/2 sheets)

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the softened butter, white sugar, and brown sugar. Beat until light and fluffy, about 2-3 minutes.
  3. Add the egg and vanilla extract to the butter and sugar mixture. Mix until well combined.
  4. In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt. Gradually add to the wet mixture, mixing until just combined.
  5. Gently fold in the chocolate chunks and mini marshmallows with a spatula.
  6. Using a cookie scoop, drop rounded tablespoons of dough onto a lined baking sheet, leaving space between each.
  7. Bake for about 10-12 minutes. Press pieces of Hershey chocolate bars into the tops of the warm cookies.
  8. Allow cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • Store cookies in an airtight container at room temperature for up to 5 days.
  • For longer storage, freeze in a single layer for up to 3 months.
  • To reheat, microwave for 10-15 seconds or warm in the oven at 350°F for a few minutes.
