Ingredients
  

  • 3 pieces chicken thighs
  • 1 piece red capsicum
  • 1 piece yellow capsicum
  • 1 piece red onion
  • 1 cup broccoli florets (about half a head of broccoli)
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon paprika

Method
 

  1. Preheat your oven to 400°F (200°C) to ensure even cooking.
  2. Wash and chop your vegetables: slice the red and yellow capsicums into strips, and cut the red onion into wedges.
  3. In a mixing bowl, combine olive oil, salt, black pepper, dried oregano, dried basil, and paprika to create a marinade. Coat the chicken thighs thoroughly.
  4. Arrange the seasoned chicken thighs on the baking tray, surrounding them with the chopped capsicums, red onion, and broccoli florets.
  5. Bake for about 30-35 minutes, or until the chicken is cooked through and vegetables are tender.
  6. Allow the dish to rest for a few minutes before serving. Enjoy it alone or with a refreshing salad!
