Ingredients
  

  • 1 pizza dough pizza dough your favorite homemade or store-bought dough
  • 1 tsp flour for stretching
  • 1 tsp olive oil divided for greasing and flavor
  • 1 tsp garlic salt adds depth to the crust
  • 1 cup pizza sauce for that classic flavor
  • 1 tsp BBQ rub to enhance the smoky profile
  • 4 oz mozzarella cheese shredded
  • 4 oz cheddar cheese shredded
  • 1 cup tri-tip smoked/cooked, diced
  • 1 medium red pepper diced into ½-inch pieces
  • ½ cup onion diced into ½-inch pieces
  • ½ cup BBQ sauce for drizzling
  • 2 tbsp fresh cilantro chopped (for serving)

Method
 

  1. Start by letting your pizza dough come to room temperature if it's been refrigerated. Lightly dust your work surface with 1 tsp of flour to prevent sticking.
  2. Using a rolling pin, gently roll out the dough into a circular shape, about 12 inches in diameter.
  3. Preheat your Traeger grill to 450°F. This high heat is crucial for achieving that crispy crust.
  4. Drizzle ½ tsp of olive oil over the stretched dough. Sprinkle with 1 tsp of garlic salt. Spread 1 cup of pizza sauce evenly over the dough.
  5. Sprinkle 4 oz mozzarella cheese and 4 oz cheddar cheese over the sauce. Layer on the 1 cup of diced tri tip, followed by the ½ cup of diced onion and 1 medium red pepper. Sprinkle 1 tsp of BBQ rub over the top.
  6. Carefully transfer the pizza onto the preheated pizza stone or baking sheet. Close the grill lid and cook for about 12-15 minutes.
  7. Once cooked, remove the pizza from the grill. Drizzle ½ cup of BBQ sauce over the top and garnish with 2 tbsp of fresh cilantro.
