Method
 

Instructions
  1. Step 1: Preheat your Traeger grill to 225°F.
  2. Step 2: Remove the husks and silk from the corn and rinse under cool water.
  3. Step 3: Drizzle the corn with olive oil and sprinkle with salt and pepper. Toss gently.
  4. Step 4: Place the corn on the grill and smoke for about 30-40 minutes.
  5. Step 5: Prepare the pesto by blending basil, garlic, pine nuts, and olive oil until smooth.
  6. Step 6: Once the corn is done, coat each ear with the pesto while warm.
  7. Step 7: Serve warm, garnished with extra pesto if desired.

Notes

  • For an extra smoky flavor, add wood chips to your Traeger grill.
  • Increase the heat for a charred finish in the last few minutes of cooking.
  • Experiment with different herbs in your pesto for a unique twist.
