Ingredients
  

  • 1/3 cup avocado oil
  • 1/3 cup fresh lemon juice
  • 1/2 cup fresh parsley
  • 2 tsp stone ground mustard
  • 2 tsp pure maple syrup
  • 1 pinch sea salt to taste
  • 1/2 cup raw almonds roasted and chopped
  • 2 cups baby kale
  • 2 cups red cabbage thinly sliced
  • 2 cups broccoli florets finely chopped
  • 2 carrots peeled and grated
  • 1/2 red bell pepper cut into matchsticks
  • 3 radishes thinly sliced
  • 4 stalks green onion chopped
  • 1 large avocado diced

Method
 

  1. In a small bowl, whisk together the avocado oil, fresh lemon juice, stone ground mustard, pure maple syrup, and a pinch of sea salt. Taste and adjust the seasoning if needed. Set aside to let the flavors meld.
  2. Using your cutting board and knife, chop the red cabbage, broccoli, radishes, and green onions. Grate the carrots and cut the red bell pepper into matchsticks.
  3. In a large mixing bowl, combine the baby kale, red cabbage, broccoli florets, grated carrots, matchstick red bell pepper, sliced radishes, and chopped green onion.
  4. Stir in the roasted and chopped almonds, which will add that delightful crunch.
