Ingredients
  

  • 1 pound ground turkey meat
  • 2 tablespoons full-fat coconut milk (from the can)
  • 1.5 teaspoons yellow curry powder
  • 1 teaspoon soy sauce
  • 1 teaspoon fresh ginger (grated)
  • 1 pinch cayenne pepper
  • 1/3 cup red onion (finely chopped)
  • 1 cup plain yogurt
  • 2 teaspoons fresh lemon juice
  • 1 teaspoon yellow curry powder (for the sauce)

Method
 

  1. In a large mixing bowl, combine the ground turkey meat, coconut milk, yellow curry powder, soy sauce, grated ginger, cayenne pepper, and finely chopped red onion. Use your hands or a spoon to mix until everything is well incorporated. Be careful not to overmix, as this can make the burgers tough.
  2. Once the mixture is ready, divide it into four equal portions and shape each into a patty. Try to keep them about ¾ inch thick for even cooking. Place the patties on a plate and refrigerate for about 15 minutes; this helps them hold their shape while cooking.
  3. While the patties chill, prepare the curry yogurt sauce. In a separate bowl, mix the plain yogurt, fresh lemon juice, and yellow curry powder. Stir until smooth and well combined. Taste and season with salt to your liking.
  4. Heat a grill or skillet over medium heat and lightly grease with oil. Once hot, add the turkey patties. Cook for about 5-7 minutes on each side, or until they reach an internal temperature of 165°F and are golden brown.
  5. Once the burgers are cooked, serve them on buns or lettuce wraps. Generously spoon the curry yogurt sauce over the top. For an extra burst of flavor, consider adding fresh toppings like sliced cucumbers or a side of Mango Salsa to complement the spices.

Notes

  • Store cooked burgers in an airtight container in the refrigerator for up to 3 days.
  • The curry yogurt sauce can also be stored separately in the fridge.
  • For longer storage, freeze uncooked patties wrapped tightly in plastic wrap.
