Ingredients
  

For the Crust:
  • 6 cups cauliflower cut into florets
  • 13 tablespoons grated reduced-fat mozzarella cheese divided
  • 1 teaspoon fresh ginger minced
  • 1 teaspoon fresh garlic minced
  • 1/4 teaspoon sea salt
  • 1 pinch pepper
  • 1 large egg white
  • 1/2 large red pepper sliced
  • Cilantro for garnish
  • Sliced green onion for garnish
  • Toasted sesame seeds for garnish
For the Peanut Sauce:
  • 2 tablespoons natural peanut butter
  • 1 tablespoon peanut oil
  • 2 teaspoons fresh lime juice
  • 1/2 teaspoon agave (or honey)
  • 1/2 teaspoon rice vinegar
  • 1/4 teaspoon fresh ginger minced
  • Salt to taste

Method
 

Instructions:
  1. Step 1: Preheat the Oven
    Start by preheating your oven to 400°F (200°C). This will ensure that your pizza crust gets that perfect golden-brown finish.
  2. Step 2: Rice the Cauliflower
    In a food processor, add the cauliflower florets and pulse until they turn into a rice-like consistency. Be careful not to over-process; you want a fine texture, not a mushy blend.
  3. Step 3: Cook the Cauliflower
    Transfer the riced cauliflower to a microwave-safe bowl and cover it with a damp paper towel. Microwave on high for about 4-5 minutes until softened. Let it cool for a few minutes before handling.
  4. Step 4: Make the Pizza Dough
    In a mixing bowl, combine the cooked cauliflower, 1 cup of grated mozzarella cheese, minced ginger, minced garlic, sea salt, pepper, and the egg white. Mix until well combined. It should hold together like a dough.
  5. Step 5: Shape the Crust
    Line a baking sheet with parchment paper. Transfer your cauliflower mixture onto the parchment and shape it into a round pizza crust, about 1/4 inch thick. The key is to make the edges slightly thicker to hold the toppings.
  6. Step 6: Bake the Crust
    Place the crust in the preheated oven and bake for 25-30 minutes or until the crust is golden brown and firm to the touch.
  7. Step 7: Prepare the Peanut Sauce
    While the crust is baking, prepare your peanut sauce. In a small bowl, whisk together the peanut butter, peanut oil, lime juice, agave, rice vinegar, minced ginger, and salt. Adjust the seasoning to taste.
  8. Step 8: Add Toppings
    Once the crust is done, remove it from the oven. Spread a generous amount of peanut sauce over the crust, then top with sliced red pepper and the remaining mozzarella cheese.
  9. Step 9: Final Bake
    Return the pizza to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  10. Step 10: Garnish and Serve
