Method
 

  1. Step 1: Preheat the Oven. Begin by preheating your oven to 400°F (200°C) to ensure even cooking.
  2. Step 2: Prepare the Mixture. In a large mixing bowl, combine the ground turkey or chicken, panko breadcrumbs, eggs, chopped scallions, chopped basil, minced garlic, fish sauce, chopped lemongrass, crushed red pepper, and melted coconut oil. Mix thoroughly, being careful not to overmix.
  3. Step 3: Form the Meatballs. Shape the mixture into meatballs, approximately 1.5 inches in diameter, and place them on a lined baking sheet, spaced apart for even cooking.
  4. Step 4: Bake the Meatballs. Bake for 20-25 minutes, or until cooked through and lightly browned. Check that the internal temperature reaches 165°F (74°C).
  5. Step 5: Serve and Enjoy. Let the meatballs cool slightly before serving. Pair with your favorite dipping sauce or serve over rice or noodles.
