Ingredients
  

  • 1/4 cup lemon juice freshly squeezed
  • 1/4 cup tahini
  • 2 tablespoons olive oil
  • 1/4 cup sun-dried tomatoes
  • 1 clove garlic minced
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon kosher salt
  • 1 15-ounce can chickpeas drained and rinsed

Method
 

  1. Begin by gathering all your ingredients. Make sure your chickpeas are well-drained and rinsed to remove excess sodium.
  2. In your food processor, combine the lemon juice, tahini, olive oil, sun-dried tomatoes, minced garlic, ground cumin, kosher salt, and chickpeas.
  3. Pulse the mixture until it’s smooth and creamy. If it’s too thick, you can add a little bit of water or extra olive oil to achieve your desired consistency.
  4. Taste your hummus and adjust the seasoning if needed. You might want a bit more salt or lemon juice depending on your preference.
  5. Transfer the hummus to a bowl. Drizzle with extra olive oil and sprinkle some additional sun-dried tomatoes or herbs on top if you like. Serve immediately or store in an airtight container in the fridge.

  • For an ultra-smooth hummus, peel the chickpeas before blending.
