In a mixing bowl, whisk together the 5 large eggs, 2/3 cup milk, 1 teaspoon vanilla extract, and 1/2 teaspoon cinnamon until well combined.
Take 4 slices of bread and spread 1 tablespoon of raspberry jam on each slice. Place a slice of Brie cheese on top of the jam, followed by another slice of bread to create a sandwich. Repeat this process for the other 4 slices of bread, forming a total of 4 sandwiches.
Heat a frying pan or griddle over medium heat and lightly grease it with butter or cooking spray.
Carefully dip each sandwich into the egg mixture, allowing it to soak for a few seconds on each side.
Place the soaked sandwiches on the hot pan. Cook each side for about 3-4 minutes, or until golden brown and the Brie is melted.
Once cooked, remove the French toast from the pan and place it on a serving plate. Top with a generous handful of mixed berries, a drizzle of maple syrup, and a dusting of powdered sugar.
