Ingredients
  

  • 8 slices bread (brioche or white, or French)
  • 5 large eggs
  • 2/3 cup milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 4 tablespoons raspberry jam
  • Brie cheese sliced and rind removed 4 slices per French toast "sandwich"
  • Mixed berries (such as strawberries, blueberries, and raspberries)

Method
 

  1. In a mixing bowl, whisk together the 5 large eggs, 2/3 cup milk, 1 teaspoon vanilla extract, and 1/2 teaspoon cinnamon until well combined.
  2. Take 4 slices of bread and spread 1 tablespoon of raspberry jam on each slice. Place a slice of Brie cheese on top of the jam, followed by another slice of bread to create a sandwich. Repeat this process for the other 4 slices of bread, forming a total of 4 sandwiches.
  3. Heat a frying pan or griddle over medium heat and lightly grease it with butter or cooking spray.
  4. Carefully dip each sandwich into the egg mixture, allowing it to soak for a few seconds on each side.
  5. Place the soaked sandwiches on the hot pan. Cook each side for about 3-4 minutes, or until golden brown and the Brie is melted.
  6. Once cooked, remove the French toast from the pan and place it on a serving plate. Top with a generous handful of mixed berries, a drizzle of maple syrup, and a dusting of powdered sugar.

  • Use whole grain or gluten-free bread for added fiber.
  • Substitute whole milk with low-fat or almond milk to reduce calories.
  • Consider using fresh fruit puree instead of raspberry jam for a naturally sweet option.
