Ingredients
  

For the Wings:
  • 1 head cauliflower cut into florets
  • 2 large eggs
  • 1.5 cups whole wheat panko breadcrumbs
  • 1 tsp paprika
  • 0.5 tsp chili powder
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 0.5 tsp salt
  • 0.25 tsp pepper
  • 1/3 cup honey
  • 3 tbsp low sodium soy sauce
  • 1 tbsp rice vinegar
  • 4 cloves garlic minced
  • 1 tsp fresh grated ginger
  • 1 tbsp cornstarch
  • 3/4 cup Greek yogurt
  • 1.5 tbsp adobo sauce from chipotle peppers
  • 0.5 tbsp lemon juice
  • 1 tsp dill dried
  • 1 tsp chives fresh or dried
  • 1 tsp parsley dried
  • 0.25 tsp salt
  • 2 to 3 tbsp water plus more as needed to thin
For Serving:
  • sesame seeds optional
  • green onions optional

Method
 

Instructions
  1. Step 1: Preheat your oven to 425°F (220°C) for that lovely crispy texture.
  2. Step 2: Wash and cut your cauliflower into bite-sized florets.
  3. Step 3: In a large mixing bowl, whisk together the eggs, paprika, chili powder, garlic powder, onion powder, salt, and pepper until well combined.
  4. Step 4: Dip each cauliflower floret into the egg mixture, then roll them in the breadcrumbs. Place on a baking sheet.
  5. Step 5: Bake for about 20-25 minutes, flipping halfway through.
  6. Step 6: In a small saucepan, combine honey, soy sauce, rice vinegar, garlic, ginger, and cornstarch. Cook until thickened, about 5-7 minutes.
  7. Step 7: Toss the baked wings in the honey garlic sauce.
  8. Step 8: Serve on a platter, topped with sesame seeds and green onions, alongside Greek yogurt mixed with adobo sauce.

  • Don’t overcrowd the baking sheet for maximum crispiness.
  • Adjust spice levels with more chili powder or hot sauce.
