Ingredients
  

For the Potatoes:
  • 1 Tablespoon olive oil
  • 2-3 Tablespoons butter
  • 1 pound Yukon Gold potatoes (quartered, about 3.5 cups)
  • 1 teaspoon Italian seasoning (more to taste)
  • Salt and pepper (to taste)
  • 2-3 cloves garlic (minced)
For the Steak:
  • 1 pound sirloin steak
  • 2 teaspoons steak rub (or substitute with salt and pepper)

Method
 

Preparation Steps:
  1. Start by washing and quartering the Yukon Gold potatoes. Mince the garlic and let it aside. Take the sirloin steak out of the fridge and let it come to room temperature for about 30 minutes.
  2. Rub the sirloin steak with olive oil, then sprinkle it generously with steak rub, salt, and pepper. Let it sit while you prepare the potatoes.
  3. In a large skillet, melt 2-3 tablespoons of butter over medium heat. Add the quartered potatoes and season with Italian seasoning, salt, and pepper. Cook for about 15-20 minutes, flipping occasionally until golden brown and tender. In the last few minutes, add the minced garlic.
  4. In another skillet or the same one after removing the potatoes, add more olive oil if needed. Heat over medium-high heat. Sear the seasoned sirloin steak for about 4-5 minutes on each side for medium-rare.
  5. Once the steak is cooked to your liking, remove it and let it rest for about 5 minutes. Slice against the grain and serve alongside the potatoes.

Notes

  • Yukon Gold potatoes can be substituted with red potatoes or russets.
  • Use ghee instead of butter for a dairy-free option.
  • Try fresh herbs like rosemary or thyme for added flavor.
