Ingredients
  

For the Salmon:
  • 1 pound fresh salmon cut into 4 pieces
  • Flour Flour for dredging
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 3/4 cup chicken broth
For the Creamy Topping:
  • 8 ounces cream cheese softened, one block Philly
  • 2 cloves garlic minced
  • 1 14 fluid ounce can artichoke hearts drained & chopped
  • 2 cups fresh baby spinach packed
  • 1/2 cup freshly grated parmesan cheese
  • Salt & pepper to taste

Method
 

Cooking Instructions:
  1. Step 1: Prepare the Salmon - Season your salmon fillets with salt and pepper. Dredge each piece lightly in flour to help create a golden crust when cooked.
  2. Step 2: Sauté the Salmon - In a large skillet, heat the olive oil and butter over medium heat. Once the butter is melted and the oil is hot, add the salmon skin-side down. Cook for about 4-5 minutes on each side, or until the salmon is cooked through and flakes easily with a fork. Remove the salmon from the skillet and set aside.
  3. Step 3: Make the Creamy Topping - In the same skillet, add minced garlic and sauté for about a minute until fragrant. Pour in the chicken broth and let it simmer for a couple of minutes. Then, add the softened cream cheese and stir until melted and smooth.
  4. Step 4: Add Spinach and Artichokes - Stir in the chopped artichoke hearts and packed fresh baby spinach. Cook until the spinach is wilted and everything is well combined. Finally, fold in the freshly grated parmesan cheese and season with salt and pepper to taste.
  5. Step 5: Combine and Serve - Return the salmon to the skillet, spooning the creamy topping generously over each piece. Let it simmer for an additional minute to meld the flavors together. Serve warm and enjoy your Spinach Artichoke Salmon!
