  • 16 oz mild cheese cubed
  • 1 tomato diced
  • 1/2 cup black beans rinsed and drained
  • 1/2 cup corn
  • 1/4 cup green onion diced
  • Tortilla chips for serving

Method
 

  1. Begin by placing the cubed mild cheese in a medium saucepan over low heat. Stir occasionally to ensure it melts evenly and doesn’t stick to the bottom.
  2. While the cheese is melting, dice your tomato and chop the green onions. Make sure to rinse and drain the black beans, and measure out the corn.
  3. Once the cheese is fully melted, add the diced tomato, black beans, corn, and green onions to the saucepan. Stir everything together until well combined.
  4. Continue to cook the dip over low heat for another 5-10 minutes, stirring frequently. This allows the flavors to meld together beautifully.
  5. Transfer the Spicy Southwest Queso Dip to a serving bowl and serve immediately with crunchy tortilla chips. Enjoy!

Notes

  • For a spicy kick, add fresh diced jalapeños in summer.
  • This dip can be made ahead of time and reheated before serving.
  • Store leftovers in an airtight container in the fridge for up to 3 days.
