Southwest Tofu Burrito

This Southwest Tofu Burrito is packed with flavor! Tofu, black beans, and avocado wrapped in a warm tortilla – a perfect meal!

Ingredients
  

For the Burrito:
  • 1 cup brown rice (or quinoa, white rice, etc.)
  • 14 oz. extra-firm tofu
  • 3 Tbsp. taco seasoning
  • 2 Tbsp. lime juice
  • 15 oz. black beans (canned)
  • 1 large avocado (or guacamole)
  • 1 cup salsa (Restaurant-Style Blender Salsa recommended)
  • 8 large tortillas (gluten-free if desired)
  • Other toppings vegan cheese, hot sauce, fresh cilantro, sweet corn, tomatoes, vegan sour cream, etc.

Equipment

  • Large skillet or frying pan
  • Medium saucepan for cooking rice
  • Cutting board and knife
  • Mixing bowl for marinating tofu
  • Spatula or wooden spoon
  • Measuring cups and spoons

Method
 

Instructions:
  1. Step 1: Prepare the Rice - Cook the brown rice (or quinoa, white rice, etc.) according to package instructions. Set aside once cooked.
  2. Step 2: Press and Marinate the Tofu - Press the tofu to remove excess moisture, then cut into cubes. Marinate with taco seasoning and lime juice for 10 minutes.
  3. Step 3: Cook the Tofu - Heat a skillet, add oil, and cook the marinated tofu for about 8-10 minutes until golden and crispy.
  4. Step 4: Heat the Beans - Warm the black beans in a small saucepan over medium heat.
  5. Step 5: Assemble the Burritos - Layer the ingredients on a tortilla: rice, crispy tofu, black beans, salsa, and avocado.
  6. Step 6: Wrap It Up - Fold the sides of the tortilla and roll tightly. Optionally, toast in a skillet for a crispy finish.

Notes

  • Pressing the tofu is key for a crispy texture.
  • Let the tofu marinate for maximum flavor.
  • Don’t overfill the burritos to make wrapping easier.
  • Warm tortillas slightly for better pliability.
