Ingredients
  

  • 1 cup butter at room temperature
  • 1 cup granulated sugar
  • 1 cup dark brown sugar
  • 2 large eggs
  • 1 ½ teaspoons vanilla extract
  • 2 ½ cups all-purpose flour
  • 2 tablespoons all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 cups semi-sweet chocolate discs (or chips)

Method
 

  1. Preheat your oven to 350°F (175°C). This ensures that your cookies bake evenly.
  2. In a large mixing bowl, beat together the butter, granulated sugar, and dark brown sugar until the mixture is light and fluffy. This should take about 3-5 minutes with an electric mixer.
  3. Add in the eggs one at a time, mixing well after each addition. Then, pour in the vanilla extract and mix until combined.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry mixture to the wet ingredients, mixing just until combined. Be careful not to overmix, as this can make your cookies tough.
  6. Gently fold in the semi-sweet chocolate discs (or chips) until evenly distributed throughout the dough.
  7. Using a spoon or cookie scoop, drop rounded tablespoons of dough onto prepared baking sheets, leaving some space between each cookie. Bake in the preheated oven for about 10-12 minutes or until the edges are golden brown.
  8. Once baked, remove cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a cooling rack.

Notes

  • For a chewier cookie, don’t overmix the dough and avoid overbaking.
  • Store cookies in an airtight container at room temperature for up to a week.
  • Freeze cookie dough by scooping it onto a baking sheet, freezing until solid, then transferring it to a zip-top bag.
