Ingredients
  

  • 2 cups All-purpose Flour
  • 1/4 cup Granulated Sugar
  • 4 tsp Baking Powder
  • 1/2 tsp Salt
  • 1 large Egg
  • 1 1/2 cups Milk
  • 1/2 cup Sour Cream
  • 1/2 cup Oil (Canola or Vegetable)
  • 1 tsp Vanilla Extract

Equipment

  • Mixing Bowl
  • Whisk
  • Measuring cups and spoons
  • Non-stick skillet or griddle

Method
 

  1. In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt.
  2. In another bowl, whisk together the egg, milk, sour cream, oil, and vanilla extract until smooth.
  3. Pour the wet ingredients into the dry ingredients. Gently fold the mixture until just combined.
  4. Heat your non-stick skillet or griddle over medium heat and lightly grease it.
  5. Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form, then flip and cook until golden brown.
  6. Transfer cooked pancakes to a plate and cover with a kitchen towel to keep warm while cooking the rest.

Notes

  • Store any leftovers in an airtight container for up to 3 days.
  • Freeze pancakes separated by parchment paper for longer storage.
  • Feel free to customize with chocolate chips or blueberries!
