Ingredients
  

For the Sopapillas:
  • 4 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 4 tablespoons shortening
  • 1 cup warm water
  • 2 quarts oil for frying
  • Honey for drizzling

Method
 

Instructions:
  1. In a large mixing bowl, combine the flour, baking powder, and salt. Whisk them together until well combined.
  2. Add shortening to the dry mixture. Incorporate it into the flour until the mixture resembles coarse crumbs.
  3. Gradually add warm water to the mixture. Stir gently until the dough begins to come together.
  4. Turn the dough onto a lightly floured surface and knead for about 5 minutes until smooth and elastic. Let it rest for about 30 minutes.
  5. Divide the dough into small balls, roll each into a circle about 1/8 inch thick.
  6. Heat oil in a frying pan over medium-high heat. Test by dropping a small piece of dough into the oil.
  7. Fry the dough circles until puffed and golden brown, about 1-2 minutes on each side. Use a slotted spoon to remove them and place on a cooling rack.
  8. Drizzle with honey before serving. Enjoy warm!
