Method
 

  1. Step 1: Preheat your oven to 350°F (175°C).
  2. Step 2: In a large mixing bowl, combine creamy peanut butter, light brown sugar, and unsalted butter. Mix until well blended, then add the egg and vanilla extract, mixing until smooth.
  3. Step 3: In a separate bowl, whisk together all-purpose flour, baking powder, and a pinch of salt. Gradually add the dry mixture to the wet ingredients, stirring until just combined.
  4. Step 4: Gently fold in the chopped mini peanut butter cups and peanut butter chips until evenly distributed.
  5. Step 5: Drop rounded balls of dough onto a lined baking sheet, leaving space in between. Bake for 10-12 minutes until edges are lightly golden.
  6. Step 6: Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
