Ingredients
  

  • 2 cups popped popcorn air-popped or microwave (omit added salt if using microwave)
  • 2 teaspoons liquid coconut oil or melted butter spread adds buttery flavor, omit if using microwave popcorn
  • to taste Salt adjust according to preference if not using microwave popcorn
  • 1/2 to 1 packet Splenda or your favorite sweetener sweeten to taste

Method
 

  1. Start by popping your popcorn. If you’re using an air popper, follow the manufacturer’s instructions. If using stovetop method, heat a pot over medium heat and add a few kernels. Once they pop, add the rest of the kernels and cover the pot. Shake occasionally until popping slows down.
  2. While your popcorn is popping, measure out the liquid coconut oil or melted butter spread in a mixing bowl. Ensure it’s not too hot to prevent burning the popcorn.
  3. Once your popcorn is ready, transfer it to the mixing bowl with the oil. Drizzle the oil over the popcorn and gently toss until evenly coated.
  4. Sprinkle the sweetener over the popcorn and toss again to combine. If using salt, sprinkle it now and mix until evenly seasoned.
  5. Transfer your Skinny Sugar Free Kettle Corn to a serving bowl and enjoy immediately, or store it in an airtight container for later!

Notes

  • For a different flavor, try using monk fruit or erythritol as a sweetener.
  • Add cinnamon or cocoa powder for a unique twist.
