In a medium saucepan over medium heat, add 1 tablespoon of Smart Balance Butter. Once melted, add the chopped onion and minced garlic. Sauté until the onion is translucent and the garlic is fragrant, about 3-4 minutes.
Pour in 1 cup of fat-free milk, stirring to combine with the sautéed onion and garlic.
Next, add the 6 wedges of Laughing Cow Light Swiss Cheese, breaking them up into smaller pieces as you add them. Stir continuously until the cheese is fully melted and the mixture is creamy.
Sprinkle in the garlic powder, onion powder, ground black pepper, and salt. Stir well to incorporate all the flavors.
In a small bowl, mix 1 teaspoon of cornstarch with a splash of cold water to create a slurry. Gradually add this mixture to the sauce while stirring constantly. Continue to cook for another 2-3 minutes until the sauce thickens to your desired consistency.
Finally, stir in the 1 tablespoon of freeze-dried chives (or fresh if you have them). Give it a final stir and remove from heat.
