  • 1 tablespoon coconut oil (divided)
  • 1 whole banana (peeled and sliced) or mixed berries

Method
 

Instructions:
  1. Step 1: Whisk the Eggs - In a mixing bowl, crack the 3 eggs and whisk them until they are well beaten.
  2. Step 2: Combine Wet Ingredients - Add the cottage cheese, vanilla extract, and honey (or maple syrup) to the eggs. Mix until well combined.
  3. Step 3: Mix Dry Ingredients - In another bowl, whisk together the flour, baking powder, cinnamon, and salt.
  4. Step 4: Combine Wet and Dry Ingredients - Gradually add the dry ingredients to the wet mixture, folding gently until just combined.
  5. Step 5: Heat the Skillet - Heat a skillet or griddle over medium heat and add 1/2 tablespoon of coconut oil.
  6. Step 6: Cook the Pancakes - Pour about 1/4 cup of the batter onto the skillet for each pancake. Cook for 2-3 minutes until bubbles form, then flip and cook until golden brown.
