  • ½ cup raw cashews unsalted
  • ½ cup protein powder unflavored or vanilla
  • ½ cup maple syrup pure
  • 1 teaspoon vanilla extract
  • ½ cup cashew butter
  • 1 tablespoon almond milk adjust for consistency
  • to taste cinnamon

Method
 

  1. Begin by placing the raw cashews in a food processor. Process until they form a fine flour-like consistency. Be careful not to over-process, or they will turn into cashew butter!
  2. In a mixing bowl, combine the rolled oats, processed cashews, protein powder, and cinnamon. Stir them together until evenly mixed.
  3. In a separate bowl, whisk together the maple syrup, cashew butter, vanilla extract, and almond milk. Adjust the almond milk based on how sticky you want the mixture to be.
  4. Pour the wet ingredients into the bowl with the dry ingredients. Mix everything together using a spoon or spatula until fully incorporated. The mixture should be thick and slightly sticky.
  5. Using your hands, take small amounts of the mixture and roll them into bite-sized balls. Place them on a cookie sheet or plate.
  6. Refrigerate the protein bites for at least 30 minutes to help them firm up. This makes them easier to handle and enhances the flavors.
  7. Once chilled, your Simple Cinnamon Vanilla Protein Bites are ready to be enjoyed! They can be eaten right away or stored for later.
