Cuisine: American

Ingredients

For the Fish:
  • 16 to 24 ounces white fish fillets (cod, halibut, or flounder work great)
  • 3 tablespoons olive oil (divided)
  • 1/4 teaspoon kosher or sea salt
  • 1/4 teaspoon black pepper (freshly ground)

Equipment

  • Large skillet
  • Spatula
  • Measuring spoons
  • Knife and cutting board
  • Serving plate

Method

Cooking Instructions:
  1. Start by patting the fish fillets dry with paper towels. This will help achieve a nice sear. Season both sides with salt and pepper.
  2. In a large skillet, heat 2 tablespoons of olive oil over medium-high heat until it shimmers.
  3. Carefully place the fish fillets in the skillet. Cook for about 3-4 minutes on one side until golden brown.
  4. Flip the fillets gently using a spatula. Squeeze the juice from the halved lemon over the fish and add the remaining tablespoon of olive oil to the pan.
  5. Continue cooking for another 3-4 minutes, or until the fish flakes easily with a fork.
  6. Transfer the fish to a serving plate. Garnish with lemon wedges and a drizzle of the pan juices for an extra flavor boost.

Notes

  • Use fresh fish for the best flavor and texture.
  • Consider adding fresh herbs like dill or parsley for extra flavor.
  • Store leftover fish in an airtight container in the refrigerator for up to 2 days.
