Ingredients
  

  • 2 1/4 cups all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter at room temperature
  • 1 cup granulated sugar
  • 1 cup light brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • Rolo candies unwrapped
  • Granulated sugar for rolling the cookie dough balls in
  • Flaky sea salt for sprinkling on cookies

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. Line a baking sheet with parchment paper.
  3. In a medium mixing bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  4. In a large mixing bowl, beat the butter, granulated sugar, and light brown sugar until light and fluffy.
  5. Add the eggs and vanilla extract to the butter-sugar mixture. Beat until well incorporated.
  6. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  7. Gently fold in the unwrapped Rolo candies.
  8. Using a cookie scoop, portion out the dough and roll it into balls, then roll each ball in granulated sugar.
  9. Place the dough balls on the prepared baking sheet, spacing them about 2 inches apart. Bake for 10-12 minutes.
  10. Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack. Sprinkle with flaky sea salt.

Notes

  • Ensure your butter is at room temperature for easy creaming.
  • For an extra gooey center, slightly underbake the cookies.
  • Experiment with different chocolate candies for a twist!
