Ingredients

  • 17 cookies Oreo cookies crushed
  • 1/4 cup butter melted
  • 1 tablespoon granulated white sugar
For the Filling:
  • 24 ounces cream cheese at room temperature
  • 1 cup granulated white sugar
  • 4 large eggs lightly beaten
  • 3 tablespoons unsweetened cocoa powder
  • 1 cup sour cream
  • 1/2 cup buttermilk
  • 2 teaspoons vanilla extract
  • 1 teaspoon distilled white vinegar
  • 2 ounces red food coloring

  • 3 ounces cream cheese
  • 1/4 cup butter at room temperature
  • 2 cups powdered sugar sifted
  • 1 teaspoon vanilla extract

Method
 

Directions:
  1. Step 1: Prepare the Crust - Preheat your oven to 325°F (160°C). In a mixing bowl, combine the crushed Oreo cookies, melted butter, and granulated sugar. Mix until the crumbs are well coated. Press this mixture firmly into the bottom of a greased 9-inch springform pan. Bake for 10 minutes, then remove from the oven and let it cool while you prepare the filling.
  2. Step 2: Make the Cheesecake Filling - In a large mixing bowl, beat the cream cheese with an electric mixer until smooth and creamy. Gradually add in the granulated sugar, and continue to mix until fully combined. Add the lightly beaten eggs one at a time, ensuring each is fully incorporated before adding the next. Mix in the cocoa powder, sour cream, buttermilk, vanilla extract, and distilled white vinegar until smooth.
  3. Step 3: Add the Color - Now, it’s time to add the red food coloring! Start with one ounce and mix well. If you desire a deeper red, gradually add the second ounce until you reach your preferred shade.
  4. Step 4: Bake the Cheesecake - Pour the cheesecake filling over the cooled crust in the springform pan. Bake in the preheated oven for about 60-70 minutes, or until the edges are set and the center slightly jiggles. Turn off the oven and leave the cheesecake inside for an additional hour to cool gradually. This helps prevent cracking.
  5. Step 5: Chill the Cheesecake - Once cooled, remove the cheesecake from the oven and let it cool to room temperature. Cover and refrigerate for at least 4 hours, preferably overnight, to let the flavors meld and the texture firm up.
