Quick and Easy Coconut Rice

Ingredients
  

  • 2 cups uncooked jasmine rice
  • 1 14-ounce can coconut milk
  • 1 cup coconut water
  • 1 tablespoon sugar
  • 1 teaspoon salt

Method
 

  1. Start by rinsing the jasmine rice under cold water until the water runs clear.
  2. In a medium saucepan, combine the rinsed jasmine rice, coconut milk, coconut water, sugar, and salt. Stir gently to mix.
  3. Place the saucepan over medium-high heat and bring to a boil while stirring occasionally.
  4. Once boiling, reduce the heat to low, cover, and let simmer for about 18-20 minutes until the rice is tender.
  5. Turn off the heat and let the rice sit covered for an additional 5 minutes. Fluff with a fork and serve warm.

Notes

  • Let the rice cool before storing in an airtight container for up to 4 days.
  • For a savory twist, substitute coconut water with vegetable broth.
  • Adjust cooking time if using brown rice instead of jasmine.
