Ingredients

  • 1 cup Ground Poppy Seeds
  • 1 1/4 cups Granulated Sugar
  • 1/3 cup Granulated Sugar
  • 2 cups Milk scalded
  • 1 tablespoon Cornstarch
  • 1 tablespoon Dry Active Yeast or Fresh Yeast Cake
  • 1/2 cup Water heated to 110°F
  • 3 cups All-Purpose Flour
  • 1/4 cup Melted Butter or Shortening
  • 3 Eggs divided
  • 1/2 teaspoon Kosher Salt plus pinch
  • 1 cup Powdered Sugar
  • 2 teaspoons Lemon Juice
  • 1/2 teaspoon Vanilla

Equipment

  • Mixing bowls
  • Measuring cups and spoons
  • Stand Mixer or Hand Mixer
  • 9x13 inch baking pan
  • Cooling rack

Method

  1. Step 1: Prepare the Yeast Mixture. In a small bowl, combine the warm water and dry active yeast. Let it sit for about 5-10 minutes until it becomes frothy.
  2. Step 2: Mix the Wet Ingredients. In a large mixing bowl, whisk together the scalded milk, melted butter or shortening, and 1 1/4 cups of sugar. Allow to cool slightly before adding two eggs and the frothy yeast mixture.
  3. Step 3: Combine Dry Ingredients. In another bowl, whisk together the flour, cornstarch, poppy seeds, and salt. Gradually add to the wet mixture, mixing until just combined.
  4. Step 4: Let It Rise. Cover the bowl with a towel and let the batter rise in a warm place for about 1 hour, or until doubled in size.
  5. Step 5: Prepare the Baking Pan. Preheat your oven to 350°F (175°C). Grease your baking pan, transfer the risen dough to it, and spread evenly.
  6. Step 6: Create the Topping. Combine the remaining egg with a tablespoon of milk and whisk. Brush over the top of the cake before baking.
  7. Step 7: Bake the Cake. Bake for 30-35 minutes, or until golden brown and a toothpick comes out clean.
  8. Step 8: Prepare the Glaze. Mix powdered sugar, lemon juice, melted butter, vanilla, and a pinch of salt. Adjust consistency with more milk if needed.
  9. Step 9: Glaze and Serve. Drizzle the glaze over the cooled cake and let set before slicing.

Notes

  • Ensure your yeast is fresh for the best rise.
  • Don’t skip scalding the milk; it enhances flavor and texture.
  • This cake freezes well for up to 3 months.
