- Step 1: Preheat your oven to 400°F (200°C).
- Step 2: Place the chicken breasts between two sheets of plastic wrap or parchment paper. Use a meat mallet or rolling pin to gently pound the chicken to an even thickness, about 1 inch.
- Step 3: In a mixing bowl, combine the Italian bread crumbs, grated Parmesan cheese, salt, oregano, basil, and pepper. Mix well.
- Step 4: In another bowl, whisk the egg until well beaten.
- Step 5: Dip each chicken breast into the egg mixture, allowing any excess to drip off. Coat the chicken in the bread crumb mixture.
- Step 6: Place the breaded chicken breasts in a greased baking dish. Bake for about 20 minutes.
- Step 7: Remove the chicken from the oven. Spoon the pizza sauce over each piece of chicken, then sprinkle with mozzarella cheese and top with quartered pepperoni.
- Step 8: Return the chicken to the oven and bake for an additional 10 minutes.
- Step 9: Remove from the oven and let cool for a few minutes. Garnish with chopped fresh basil if desired, then slice and serve warm.
