Peanut Butter Tofu with Sriracha

Ingredients
  

  • 16 oz firm or extra firm tofu
  • 1 tablespoon peanut oil
  • Several large garlic cloves sliced
  • 1 large piece of ginger root sliced
  • 2 tablespoons green onions diagonally sliced

Method
 

  1. Start by draining the tofu and pressing it to remove excess moisture. Wrap the tofu in a clean kitchen towel and place a heavy object on top for about 15-20 minutes.
  2. Once the tofu is pressed, cut it into bite-sized cubes. Slice the garlic and ginger as well, preparing all your ingredients for easy cooking.
  3. In a non-stick skillet, heat the peanut oil over medium heat. Once hot, add the sliced garlic and ginger, sautéing for about 2 minutes or until fragrant.
  4. Add the cubed tofu to the skillet. Cook for about 5-7 minutes, turning occasionally until the tofu is golden brown on all sides.
  5. In a small bowl, mix together your favorite peanut butter with a splash of water to create a smooth sauce. Pour the peanut butter sauce over the tofu and stir to combine.
  6. Drizzle Sriracha over the tofu to your desired level of heat. Stir well to ensure every piece is flavorful and spicy.
  7. Remove the skillet from the heat. Serve the Peanut Butter Tofu hot, garnished with the sliced green onions.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • To reheat, use a skillet over low heat, stirring occasionally.
  • Feel free to substitute peanut butter with almond or cashew butter for a different flavor.
