Ingredients
  

  • 2/3 cup all-purpose flour
  • 5 1/2 cups sweetened flaked coconut
  • 1/4 teaspoon salt
  • 1 1/4 cups creamy peanut butter
  • 1 can sweetened condensed milk 14-oz
  • 2 teaspoons vanilla extract or 1 teaspoon vanilla and 1 teaspoon almond extract
  • 1/2 cup semisweet chocolate chips
  • 1/2 teaspoon shortening, butter, or coconut oil

Method
 

  1. Step 1: Preheat your oven to 325°F (160°C). This temperature is perfect for baking the macaroons to golden perfection.
  2. Step 2: Line a baking sheet with parchment paper to prevent the macaroons from sticking.
  3. Step 3: In a large mixing bowl, combine the all-purpose flour, sweetened flaked coconut, and salt. Stir well to ensure that the dry ingredients are evenly distributed.
  4. Step 4: In another bowl, mix the creamy peanut butter, sweetened condensed milk, and vanilla (or vanilla and almond extract) until smooth and creamy.
  5. Step 5: Gradually add the wet mixture to the dry ingredients, stirring gently until everything is well combined. The mixture should be thick and sticky.
  6. Step 6: Gently fold in the semisweet chocolate chips, ensuring they are evenly distributed throughout the mixture.
