Ingredients

For the Oatmeal:
  • 2 pieces very ripe bananas mashed
  • 1/4 cup peanut butter creamy or crunchy
  • 3 cups milk any type
  • 3 tablespoons Truvia Brown Sugar Blend
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 2 tablespoons flax seed
  • 1 cup steel cut oats
For Topping:
  • 1 cup bananas sliced fresh
  • 1 tablespoon Truvia Brown Sugar Baking Blend for topping

Equipment

  • Crockpot
  • Measuring cups and spoons
  • Mixing Bowl
  • Spoon or spatula

Method

Directions:
  1. Start by smashing the two very ripe bananas in a mixing bowl. The riper they are, the sweeter your oatmeal will be.
  2. Add the peanut butter, milk, Truvia Brown Sugar Blend, cinnamon, vanilla extract, and flax seeds to the bowl with the mashed bananas. Stir until everything is well combined.
  3. Fold in the steel cut oats to the mixture. Make sure they’re evenly distributed throughout.
  4. Pour the entire mixture into your crockpot. Spread it out evenly and cover with the lid.
  5. Set your crockpot to low and allow it to cook for 6 to 8 hours. This is perfect for overnight cooking; just set it before you go to bed!
  6. Once cooked, stir the oatmeal before serving. Top with additional sliced bananas and a sprinkle of Truvia Brown Sugar Baking Blend for extra sweetness if desired. Enjoy your warm, hearty breakfast!

Notes

  • For extra flavor, consider adding a pinch of nutmeg in the fall.
