Preheat your oven to 350°F (175°C).
In a small saucepan over low heat, melt the coconut oil until it’s fully liquefied. Remove from heat and let it cool slightly.
In a mixing bowl, whisk together the melted coconut oil and pure maple syrup until well combined. Add the whisked egg and vanilla extract (if using), and mix until smooth.
In another bowl, combine almond flour, cocoa powder, baking powder, baking soda, sea salt, and ground cinnamon (if using). Mix well.
Gradually add the dry mixture into the wet mixture, stirring until just combined.
Gently fold in the chocolate chips.
Using a cookie scoop or spoon, drop rounded tablespoons of dough onto the prepared baking sheet.
Bake for 10-12 minutes until set but slightly soft in the center.
Remove from the oven and let cool on the baking sheet for about 5 minutes before transferring to a wire rack.
