  • 2 large lemons (about ½ pound, scrubbed clean)
  • 8 cups water
  • 8 cups white granulated sugar

  • ½ teaspoon vanilla extract

  1. Step 1: Prepare the Fruit - Wash the oranges and lemons thoroughly under running water. Cut them into quarters and remove any seeds. Chop into smaller pieces, keeping the peels intact.
  2. Step 2: Soak the Fruit - Place the chopped oranges and lemons into a large pot and add 8 cups of water. Let soak overnight (or for at least 8 hours).
  3. Step 3: Cook the Mixture - Bring the mixture to a boil over medium-high heat. Reduce heat and let simmer uncovered for about 1 to 1.5 hours until the fruit is soft.
  4. Step 4: Add Sugar - Gradually stir in the white granulated sugar until completely dissolved.
  5. Step 5: Flavor It Up - Add the orange and vanilla extracts, stirring well to combine.
  6. Step 6: Test for Doneness - Drop a spoonful onto a cold plate; if it sets, it’s done. If runny, cook a few minutes more.
  7. Step 7: Jar the Marmalade - Ladle the marmalade into sterilized jars, leaving about ¼ inch of headspace. Wipe rims for a good seal.
  8. Step 8: Seal and Store - Seal jars and let cool at room temperature. Store in the refrigerator for up to six months or in the pantry for a year if sealed properly.
