Ingredients
  

  • 1/3 cup salted butter softened
  • 1/3 cup granulated sugar
  • 1 large egg yolk
  • 1/2 teaspoon vanilla extract
  • 1/8 teaspoon almond extract optional
  • 3/4 cup all-purpose flour
  • 1/4 teaspoon baking soda
  • 1/8 teaspoon salt
  • 1/3 cup powdered sugar, granulated sugar, or sprinkles for rolling, if desired

Method
 

  1. Preheat your oven to 350°F (175°C) to ensure the cookies bake evenly.
  2. In a mixing bowl, combine the softened butter and granulated sugar. Use your handheld electric mixer (or a whisk if you’re feeling adventurous) to cream them together until light and fluffy.
  3. Next, add the egg yolk, vanilla extract, and almond extract (if using) to the bowl. Mix until everything is well combined.
  4. In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, mixing until just combined. Be careful not to overmix!
  5. Scoop out tablespoon-sized portions of dough and roll them into balls. If you like, roll the balls in powdered sugar, granulated sugar, or sprinkles for an extra touch of sweetness and color.
  6. Place the cookie balls on a lined baking sheet, spacing them about 2 inches apart. Bake in the preheated oven for 8-10 minutes, or until the edges are lightly golden.
  7. Once baked, remove the cookies from the oven and let them cool on the baking sheet for about 5 minutes. Transfer them to a cooling rack to cool completely before enjoying!

  • Make sure your butter is softened to room temperature for easy mixing.
