- Step 1: Preheat your oven to 350°F (175°C) and line a 9x9 inch baking pan with parchment paper.
- Step 2: In a large mixing bowl, combine the quick oats, unsweetened coconut, pepitas, ground cinnamon, and sea salt. Stir until mixed.
- Step 3: In a separate bowl, whisk together the honey, coconut oil, brown sugar, and vanilla extract until smooth.
- Step 4: Pour the wet mixture into the dry ingredients and stir until everything is well coated. Add in the raisins or dried cranberries and mini chocolate chips.
- Step 5: Transfer the mixture to the prepared baking pan and press it down firmly with a spatula or your hands.
- Step 6: Bake for 25-30 minutes, or until the edges are golden brown.
- Step 7: Remove from the oven and let it cool completely before cutting into squares or bars.
