Add the old fashioned oats, vanilla protein powder, and flaky sea salt to the wet mixture. Mix until fully incorporated.
Gently fold in the semi-sweet chocolate chips, coconut oil, and M&Ms until evenly distributed.
Transfer the mixture into the prepared baking pan. Press it down firmly and evenly with a spatula.
Sprinkle a pinch of flaky sea salt on top for a sweet and salty combination.
Chill the pan in the refrigerator for at least 1 hour to allow the bars to set.
Once firm, lift the bars out of the pan using the parchment paper overhang and slice into squares.
