These No Bake Monster Cookie Bars are a delightful treat! Packed with oats, peanut butter, and chocolate, they're quick and easy to make.

Ingredients
  

  • 1 cup creamy natural peanut butter Costco brand recommended
  • 1/3 cup honey
  • 1 teaspoon pure vanilla extract
  • 2 cups old fashioned oats
  • 1/4 cup vanilla protein powder *recommended
  • 1/2 teaspoon flaky sea salt
  • 1 cup semi-sweet chocolate chips
  • 1 tablespoon coconut oil
  • 2 to 3 tablespoons M&Ms
  • to taste Flaky sea salt for sprinkling on top

Method
 

  1. Start by lining a 9x9-inch baking pan with parchment paper, leaving some overhang on the sides.
  2. In a large mixing bowl, combine the creamy natural peanut butter, honey, and pure vanilla extract. Stir until smooth.
  3. Add the old fashioned oats, vanilla protein powder, and flaky sea salt to the wet mixture. Mix until fully incorporated.
  4. Gently fold in the semi-sweet chocolate chips, coconut oil, and M&Ms until evenly distributed.
  5. Transfer the mixture into the prepared baking pan. Press it down firmly and evenly with a spatula.
  6. Sprinkle a pinch of flaky sea salt on top for a sweet and salty combination.
  7. Chill the pan in the refrigerator for at least 1 hour to allow the bars to set.
  8. Once firm, lift the bars out of the pan using the parchment paper overhang and slice into squares.

Notes

  • Store the bars in an airtight container in the refrigerator for up to one week.
  • Freeze for up to three months, wrapped tightly.
  • For a nut-free option, use sunflower seed butter instead of peanut butter.
