Ingredients
  

  • 2 1/2 cups rolled oats - the base of our bites, providing fiber and texture.
  • 1/2 cup nuts - choose from almonds, pistachios, pecans, or cashews, depending on your preference.
  • 1/4 cup chocolate chips - for a touch of sweetness and indulgence.
  • Pinch kosher salt - enhances flavor and balances the sweetness.
  • 3/4 cup natural nut butter - adds creaminess and binds all the ingredients together.
  • 1/3 cup honey - a natural sweetener that helps to hold everything together.

Method
 

  1. Begin by measuring out all your ingredients so that you have everything ready to go. This will make the mixing process quick and efficient.
  2. In a large mixing bowl, combine the rolled oats, chopped nuts, chocolate chips, and a pinch of kosher salt. Stir everything together until well mixed.
  3. In a separate bowl, mix together the natural nut butter and honey until smooth. You can slightly warm the nut butter in the microwave for about 10-15 seconds to make it easier to mix if necessary.
  4. Pour the nut butter and honey mixture over the dry ingredients. Using a rubber spatula, mix thoroughly until all the ingredients are well incorporated and evenly coated.
  5. Line your baking dish with parchment paper or lightly grease it. Transfer the mixture into the dish and press it down firmly to create an even layer. You can use the back of a measuring cup to help pack it tightly.
  6. Place the dish in the refrigerator to chill for at least 30 minutes. This will help the granola bites set and hold their shape.
  7. Once chilled, remove the granola mixture from the dish and cut it into bite-sized squares or bars. Enjoy these no bake granola bites as a nutritious snack anytime!

Notes

  • Store in an airtight container in the refrigerator for up to one week.
  • Freeze for up to three months, layered between parchment paper in a freezer-safe container.
