No-Bake Fudge Brownie Bites

Ingredients
  

  • 1/2 cup raw almonds
  • 1/2 cup raw walnuts
  • 1/4 cup good quality cocoa powder
  • 1 teaspoon pure vanilla extract
  • 1 cup pitted dates (no added sweeteners)
  • 1 tablespoon water (use additional water if needed)
  • 1 tablespoon cocoa powder (optional)

Method
 

  1. Begin by gathering all your ingredients. Measure out the raw almonds, raw walnuts, cocoa powder, vanilla extract, pitted dates, and water. Make sure your dates are pitted and soft; if they are a bit dry, soak them in warm water for about 10 minutes.
  2. In a food processor, add the raw almonds and walnuts. Pulse them until they are finely chopped but not turned into a powder. You want some texture, so be careful not to over-process.
  3. Add the good quality cocoa powder, pure vanilla extract, pitted dates, and 1 tablespoon of water to the nut mixture in the food processor. Blend until the mixture starts to clump together. If it seems too dry, add a little more water, one teaspoon at a time, until it reaches a dough-like consistency.
  4. Once the mixture is blended well, use your hands to form small balls, about 1 inch in diameter. If you prefer, you can also use a cookie scoop to help you portion them out evenly.
  5. If you love the idea of extra chocolatey goodness, roll each brownie bite in cocoa powder to coat them. This step is optional but highly recommended for that rich chocolate flavor!
  6. Place your brownie bites on a baking sheet or plate lined with parchment paper. Refrigerate for at least 30 minutes to firm up. Once chilled, they are ready to enjoy!

Notes

  • Store brownie bites in an airtight container in the refrigerator for up to one week.
  • Freeze for up to three months, separating layers with parchment paper.
  • Try adding superfoods like chia seeds for extra nutrition!
