Ingredients
  

For the Crust:
  • 1 cup crushed vanilla wafers
  • 2 tablespoons unsalted butter melted
For the Cream Layer:
  • 4 ounces low-fat cream cheese
  • 1 cup powdered sugar
  • 1 cup fat-free Cool Whip
For the Pudding:
  • 2 ounces Jell-O vanilla pudding (two packages, each containing 4 servings)
  • 2 cups milk
For the Topping:
  • 2 cups fat-free Cool Whip
  • 2 medium bananas sliced
  • 2 tablespoons chocolate shavings or toffee bits

Method
 

Instructions:
  1. In a medium bowl, combine the crushed vanilla wafers and melted butter. Mix until the crumbs are well coated. Press this mixture firmly into the bottom of your baking dish to form an even crust. Set aside.
  2. In a large mixing bowl, beat the low-fat cream cheese until smooth. Gradually add in the powdered sugar, mixing until well combined. Gently fold in 1 cup of fat-free Cool Whip until the mixture is light and fluffy.
  3. In another bowl, whisk together the Jell-O vanilla pudding mix and milk until well combined. Let it sit for a couple of minutes until it thickens.
  4. Spread half of the cream cheese mixture over the crust, followed by half of the pudding mixture. Layer half of the sliced bananas on top, then repeat the process with the remaining cream cheese mixture, pudding, and bananas.
  5. Spread the remaining 2 cups of fat-free Cool Whip over the top of your layered dessert. Smooth it out with a spatula for a beautiful finish.
  6. Sprinkle the top with chocolate shavings or toffee bits for an extra touch of sweetness and crunch.
  7. Cover the dessert with plastic wrap and refrigerate for at least 4 hours, or overnight for best results.

Notes

  • For a fruity twist, add fresh berries in spring.
  • In fall, swap bananas for apples with cinnamon.
  • Freeze layers separately for easy prep ahead of time.
