My Favorite Detox Salad!

Ingredients
  

For the Salad:
  • 2 cups kale washed and chopped
  • 2 cups broccoli florets roughly chopped
  • 2 cups Brussels sprouts sliced
  • 2 cups red cabbage shredded
  • 1 cup carrots shredded
  • 1/2 cup fresh parsley finely chopped
  • 1/2 cup almonds roughly chopped
  • 1 to 2 tablespoons sunflower seeds for topping
For the Dressing:
  • 3 tablespoons olive oil extra virgin
  • 1/2 cup lemon juice freshly squeezed
  • 1 tablespoon fresh ginger grated
  • 3 teaspoons Dijon mustard
  • 2 teaspoons honey or maple syrup
  • 1/4 teaspoon salt

Method
 

Preparation Steps:
  1. Start by washing the kale thoroughly. Use a salad spinner to remove excess water. Remove the tough stems and roughly chop the leaves. Add the chopped kale to your large mixing bowl.
  2. Next, prepare the broccoli florets, Brussels sprouts, red cabbage, and carrots. Ensure all the vegetables are roughly chopped into bite-sized pieces, and add them to the bowl with the kale.
  3. Finely chop the fresh parsley and sprinkle it over the mixed veggies. This will add a burst of freshness and flavor.
  4. Roughly chop the almonds and add them to the salad along with the sunflower seeds. This adds a delightful crunch that makes each bite enjoyable.
  5. In a separate bowl, combine the olive oil, lemon juice, grated ginger, Dijon mustard, honey or maple syrup, and salt. Whisk until well combined.
