My Favorite Chocolate Chip Cookies

Ingredients
  

  • 2 cups minus 2 tablespoons cake flour
  • 1 cup bread flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon coarse salt
  • 1 cup unsalted butter softened
  • 1 cup packed light brown sugar
  • 1 cup plus 2 tablespoons granulated sugar
  • 2 large eggs
  • 2 teaspoons pure vanilla extract
  • 1 pound bittersweet chocolate disks or chips at least 60% cacao content
  • Sea salt (optional, for sprinkling)

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, whisk together the cake flour, bread flour, baking soda, baking powder, and coarse salt.
  3. In a large mixing bowl, beat the softened unsalted butter, light brown sugar, and granulated sugar together until light and fluffy.
  4. Add the eggs, one at a time, mixing well after each addition. Then, add the pure vanilla extract and blend until combined.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Gently fold in the bittersweet chocolate disks or chips using a spatula.
  7. Using a cookie scoop or tablespoon, drop dough balls onto a lined baking sheet, leaving space between each cookie.
  8. Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden and the centers are still soft.

Notes

  • Store cookies in an airtight container at room temperature for up to a week.
  • Freeze cookie dough balls for longer storage, baking straight from the freezer.
  • Chill the dough for at least 30 minutes for thicker cookies.
