Ingredients
  

For the Pineapple BBQ Sauce:
  • 40 ounces pineapple chunks
  • 1/2 cup pineapple juice
  • 3 tablespoons pineapple juice
  • 1 tablespoon garlic minced
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon balsamic vinegar
  • 2 1/2 teaspoons molasses
  • 1/2 teaspoon salt
  • 1 pinch pepper
For the Meatloaf:
  • 1 1/2 pounds lean ground turkey
  • 1/2 cup old-fashioned oatmeal
  • 1/3 cup onion diced
  • 1/2 cup pineapple tidbits
  • 1/2 tablespoon garlic minced
  • 1/4 cup cilantro thoroughly chopped
  • 3/4 teaspoons smoked paprika
  • 1 1/2 tablespoons hickory liquid smoke
  • 3/4 teaspoons salt
  • 1 pinch pepper

Method
 

  1. Step 1: Preheat the oven to 350°F (175°C) for even cooking.
  2. Step 2: Prepare the Pineapple BBQ Sauce by combining pineapple chunks, pineapple juice, garlic, balsamic vinegar, molasses, salt, and pepper in a saucepan. Cook until it bubbles, then simmer for 10 minutes.
  3. Step 3: In a mixing bowl, combine ground turkey, oatmeal, egg, onion, pineapple tidbits, garlic, cilantro, smoked paprika, liquid smoke, salt, and pepper. Mix well.
  4. Step 4: Shape the mixture into mini loaves in a greased loaf pan or muffin tin.
  5. Step 5: Bake in the oven for 20-25 minutes until the internal temperature reaches 165°F (74°C).
  6. Step 6: Brush the tops with pineapple BBQ sauce during the last 5 minutes of baking.
  7. Step 7: Allow to cool for a few minutes before serving. Drizzle any remaining sauce on top.

  • For gluten-free, use certified gluten-free oats.
  • For a vegetarian option, swap turkey with lentils or beans.
  • Add extra jalapeños for more spice.
