Ingredients
  

For the Shortbread Layer:
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter room temperature
  • 1/4 cup sugar
For the Caramel Filling:
  • 1/2 cup unsalted butter cut into pieces
  • 1/2 cup sugar
  • 2 tbsp light corn syrup
  • 14 oz sweetened condensed milk
For the Chocolate Topping:
  • 3.5 oz milk chocolate or semisweet chocolate finely chopped
  • 1/2 tsp light corn syrup
  • 1/4 cup unsalted butter cut into pieces

Method
 

Instructions:
  1. Step 1: Preheat your oven to 350°F (175°C). In a mixing bowl, combine the all-purpose flour, baking powder, and salt. In another bowl, cream together the room temperature butter and sugar until light and fluffy. Gradually mix in the dry ingredients until a dough forms.
  2. Step 2: Press the shortbread mixture evenly into the bottom of your prepared baking dish. Bake in the preheated oven for about 15-20 minutes, or until the edges are golden. Remove from the oven and set aside to cool slightly.
  3. Step 3: In a saucepan over medium heat, combine the pieces of unsalted butter, sugar, light corn syrup, and sweetened condensed milk. Stir continuously until the mixture comes to a boil. Allow to boil for about 5 minutes, stirring constantly to prevent burning. Once thickened, pour the caramel filling over the baked shortbread layer, spreading it evenly.
  4. Step 4: Let the bars cool to room temperature, then refrigerate for at least 2 hours to allow the caramel to set.
  5. Step 5: Once the bars are chilled, melt the finely chopped chocolate with the remaining butter and light corn syrup in a double boiler or microwave. Stir until smooth and glossy.
  6. Step 6: Pour the melted chocolate over the chilled caramel layer, spreading it evenly. Return the bars to the refrigerator for an additional 30 minutes to set the chocolate. Once set, slice into squares and enjoy your delicious Millionaire Bars!

Notes

  • For a gluten-free version, use gluten-free all-purpose flour.
  • Replace unsalted butter with coconut oil for a dairy-free alternative.
